- Calcium Propionate, listed as E number 282 in the Codex Alimentarius, is a food preservative.This substance is utilized as a preservative across a broad range of products. In the agricultural sector, among other applications, it is employed to stop milk fever in cows and serves as a feed additive. Similar to benzoates, propionates impede microbes from generating the energy they require. However, in contrast to benzoates, propionates do not necessitate an acidic environment.
- In bakery products, calcium propionate functions as a mold inhibitor. Usually, it is added at a concentration of 0.1 - 0.4% (although in animal feed, the content can be as high as 1%). For bakers, mold contamination is regarded as a significant issue. The conditions typically present in baking are nearly ideal for mold growth. Calcium propionate, along with propionic acid and sodium propionate, is used as a preservative in bread and other baked goods. Additionally, it occurs naturally in butter and certain types of cheese.
