- During food production, Nisin finds application in processed cheese, meats, beverages, and other products. It functions to extend the shelf life by inhibiting Gram-positive spoilage and pathogenic bacteria. In the food industry, the usage level of nisin typically varies from approximately 1 - 25 ppm. This range depends on the specific type of food and regulatory approvals. As a food additive, nisin is assigned an E number, which is E234. Furthermore, owing to its naturally selective activity spectrum, nisin is utilized as a selective agent in microbiological media. This application is for the isolation of gram-negative bacteria, yeast, and moulds. In addition, nisin has been incorporated into food packaging applications. It can act as a preservative by being released in a controlled manner onto the food surface from the polymer packaging material.
