  • This preservative is employed to prevent the growth of molds and yeasts in numerous food products, such as cheese, wine, yogurt, dried meats, apple cider, soft drinks, fruit juices, and baked goods. It is also commonly listed as an ingredient in dried fruit products. Additionally, potassium sorbate is included in herbal dietary supplements to inhibit mold and microbial growth, thereby extending shelf life. It is used in amounts that are not associated with adverse health effects over short durations.
  • As a food preservative, potassium sorbate functions as an acidic preservative, often combined with organic acids to enhance its antimicrobial efficacy. It is synthesized using potassium carbonate or potassium hydroxide and sorbic acid. Sorbic acid and its potassium salt are effective in suppressing the activity of molds, yeasts, and aerobic bacteria, significantly prolonging the shelf life of food while preserving its original flavor.
