- Potassium sorbate, the potassium salt derived from sorbic acid with the chemical formula C6H7KO2, is widely utilized as a food preservative, designated as E number 202. It is highly effective in various applications, including food, wine, and personal care items.
- The production of potassium sorbate involves the reaction of sorbic acid with an equivalent amount of potassium hydroxide. The product can then be crystallized from a solution of aqueous ethanol.
- This preservative is employed to prevent the growth of molds and yeasts in numerous food products, such as cheese, wine, yogurt, dried meats, apple cider, soft drinks, fruit juices, and baked goods. It is also commonly listed as an ingredient in dried fruit products. Additionally, potassium sorbate is included in herbal dietary supplements to inhibit mold and microbial growth, thereby extending shelf life. It is used in amounts that are not associated with adverse health effects over short durations.
- As a food preservative, potassium sorbate functions as an acidic preservative, often combined with organic acids to enhance its antimicrobial efficacy. It is synthesized using potassium carbonate or potassium hydroxide and sorbic acid. Sorbic acid and its potassium salt are effective in suppressing the activity of molds, yeasts, and aerobic bacteria, significantly prolonging the shelf life of food while preserving its original flavor.
- In cosmetics, potassium sorbate serves as an organic acid preservative, typically added at a concentration of 0.5%. It can be used in combination with sorbic acid. Although it is highly soluble in water, making it convenient to use, a 1% aqueous solution has a pH of 7-8, which can increase the pH of cosmetic formulations.
