Description
- Sodium diacetate is a molecular combination of acetic acid and sodium acetate. As described in a patent, free acetic acid is incorporated into the crystal lattice of neutral sodium acetate. The acid is held firmly, as indicated by the product having a negligible odor. When in solution, it dissociates into its components, acetic acid and sodium acetate. Sodium diacetate serves as a buffering agent in meat products, where it regulates acidity. Additionally, it curbs the growth of numerous microorganisms commonly present in meat products. For this reason, it can function as a preservative, ensuring food safety and extending the shelf life of meat products. Furthermore, sodium diacetate can be employed as a flavoring agent. In the form of a powdered seasoning, it adds a vinegar - like taste to meat products.
