Description
- Sorbic Acid, also known as 2,4-hexadecenoic acid, is a naturally occurring organic compound that serves as a food preservative. Its chemical formula is C6H8O2. This compound appears as a colorless solid, which is sparingly soluble in water and has the property of sublimating easily. It was initially extracted from the unripe berries of the rowan tree (Sorbus aucuparia), which is where its name originates.
- Sorbic Acid exists as colorless acicular crystals or a white crystalline powder. It has some solubility in water and is employed as a preservative. In our daily lives, Sorbic Acid can be extensively utilized as a food ingredient or a food additive. Its main applications are found in various industries, including food, beverages, tobacco, pesticides, and cosmetics. As an unsaturated acid, it also finds use in the resins, spices, and rubber industries.
Applications
- Sorbic Acid is extensively applied in multiple industries such as food, beverages, pickled vegetables, tobacco, pharmaceuticals, cosmetics, and agricultural products. Additionally, it is used in the preparation of preservatives, fungicides, insecticides, and in the synthetic rubber industry. It functions as an inhibitor for molds and yeasts, a food antifungal agent, a dry oil denaturant, and a fungicide.
- Among the preservatives used globally, Sorbic acid and potassium sorbate are the most prevalent ones. They possess strong antibacterial properties. They can inhibit the growth and reproduction of molds by interfering with the dehydrogenase system within microorganisms, thus preventing the growth of these microorganisms and safeguarding against spoilage. Sorbic acid has an inhibitory effect on molds, yeasts, and many types of bacteria. However, it has little to no effect on anaerobic spore-forming bacteria and Lactobacillus acidophilus. It is commonly used for the preservation of various foods, including cheese, yogurt and other dairy products, bread and snack items, beverages, fruit juices, jams, pickled vegetables, and fish products.
